Anise is sweet and highly aromatic, distinguished by its characteristic flavor. The seeds, whether whole or ground, are used to prepare teas and tisanes (either alone or in combination with other aromatic herbs). Anise is a common ingredient in a wide variety of regional and ethnic confectioneries, including black jelly beans, British aniseed balls, Italian pizzelle, German Pfeffernüsse, Austrian Anisbögen, Dutch muisjes, and New Mexican bizcochitos, among others.

Anise also plays an important role in beverages, such as Mexican atole de anís and champurrado (a drink similar to hot chocolate). It is commonly taken as a digestive after meals in Pakistan and India. In Ancient Rome, spiced cakes flavored with anise seed called mustachoes were served at the end of feasts, a tradition that eventually led to the custom of serving cake at weddings.
